It's 2015 and most of us are welcoming the new year with resolutions to eat healthy, be fit, and lose the weight gained from the holidays.
Here are some of the healthy food I prepared for myself posted on Instagram.

For a quick breakfast, scrambled eggs, grape tomatoes, and puffed brown rice cake with hummus

For lunch, I thought a vegetarian lettuce wrap would be great. I love those duck lettuce wraps with hoisin sauce that I get from Chinese restaurants. I looked for a vegetarian version of it that uses tofu, mushroom and brown rice. For dinner, I have been making salads like this Moroccan chickpea and carrot salad and Southwestern black bean salad. I found that they are very filling and satisying.

For a snack or dessert, I was really craving for ice cream. Instead I blended some frozen blueberries in greek yogurt with no added sugar.

Eating Healthy!

I've been working on eating healthy! My goal is to eat the right amount of calories, add more fruit and vegetables in my diet, and avoid sugary and salty food. The hard part is I am a sugar addict. I love cakes and pastries! With the start of my diet I banned myself from cakes and pastries and anything with added sugar for almost a month. That means no sugary drinks and no desserts! I did allow myself the occasional 100 calorie piece of dark chocolate.
I ended up eating more fruits for breakfast to curb the cake craving. And to control my calorie intake I've taken an interest in eating more vegetables. This means snacking on carrots and peppers and preparing more vegetarian meals.

A First: Salted Caramel Cake Pops

I've been hearing this line lately, so I did.

For my first post, I would like to share my quick and easy guide to making salted caramel cake pops. I made this for my friend's birthday. She recently gifted me with a cake pop tower that I was excited to put into use. This is my first attempt at making cake pops.  The idea is pretty much based on the Starbucks salted caramel cake pops. I used boxed chocolate cake and ready made caramel syrup, but you can also make your own from scratch and there are a few recipes available online. My cake pops turned out pretty well and I absolutely love the pink Himalayan sea salt topping.
